<12 Days of Cookies - Oatmeal Butterscotch Chip Cookies

So I bought a bag of butterscotch chocolate chips… last year, and I haven’t done anything with them! To be honest, part of the reason behind the delay is that I don’t like them. I love butterscotch, don’t get me wrong, but just something about them in chip form that doesn’t taste as appealing.

Judge me if you want for using a bag of year old chocolate chips, but I finally made some cookies with them. I thought they would taste better in a cookie, cuz cookies always taste good but I was wrong. To be honest, I was super duper disappointed with these cookies. I didn’t like them at all. Thank goodness I have a lot of guy friends, and guys eat anything and everything so I gave them all away. “Take them!” I said. And took them they did.

Maybe I’m just being biased because I don’t butterscotch chips cuz after all, my friends enjoyed them!

I CAN’T BELIEVE THERE ARE ONLY 2 MORE DAYS TIL CHRISTMAS! AND I DON’T FEEL CHRISTMASY AT ALL. I THINK IM HAVING A CHRISTMAS CHEER CRISIS.

Oatmeal Butterscotch Chip Cookies
yield: approx 4 dozen

Ingredients

3/4 cup butter or margarine
3/4 cup sugar
3/4 cup packed light brown sugar
2 eggs
1 tsp vanilla
1 1/4 cups AP flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
3 cups quick cooking or regular rolled oats
1 2/3 cups butterscotch chips

How To

1. Preheat oven to 350 degrees F.

2. Beat butter and sugars in a large bowl until well blended. Add eggs and vanilla.

3. Stir flour, baking soda, salt and cinnamon together in another bowl. Gradually add it to butter mixture.

4. Stir in oats and butterscotch chips. Drop dough onto baking sheet and bake for 8-10 minutes. Cool on sheet slightly then transfer to cooling rack.
