Spring is here in physical and allergenic form, but where the heck are the warmer temperatures?!

I’m one of those unfortunate people who are always COLD. Like all year round. Even in the summer.

My nails and lips permanently don a blue hue. Just waiting for it to come into style now!

I spend 70% of my time just shivering and wearing sweaters on sweaters on sweaters (which should really be renamed since I produce zero sweat in them.)

I’m SO cold that I don’t even want to move because once I move, new surface area will be exposed to the cold and dry Vancouver air. Yenno what I’m saying?

When I travelled to Bagan, Myanmar and it was 45 degrees C everyday, I was FINALLY warm enough to sustain a functional body temperature where I didn’t feel like my bloodstream was halting to a stop and was slowly turning into ice. It was pure bliss.

So while everyone sips on their ice cold drinks in the summer, I will be clutching onto a venti sized cardamom hot chocolate as per usual. If you live in Vancouver, here’s where you used to be able to get your (cold) hands on one. But now that they’re out of business due to a building fire (I’m still mourning), I gift to you THIS recipe to make your own cardamom hot chocolate at home.

I came up with this recipe when I decided that my addiction was crippling my bank account. At six bucks a pop, this was no cheap daily indulgement.

To make this cardamom hot chocolate, you start out with a base that is more cream than milk (for richness, duh). Then you add cardamom until your tastebuds are happy.

If this combo sounds odd to you, don’t kick it until you’ve tried it! When the cravings kick in, you’ll wish you started carrying a bottle of cardamom in your purse/bag…

Cardamom Hot Chocolate with Homemade Marshmallows

Rich and decadent French drinking chocolate with a hint of cardamom and topped with a homemade marshmallow.
Servings 2 cups

Ingredients
  

Homemade Vanilla Bean Marshmallows

  • 1 cup powdered sugar
  • 3 packets powdered gelatin about 7.5tsp (I used Knox)
  • 1 3/4 cups granulated sugar
  • 3/4 cup light corn syrup
  • Pinch salt
  • 1 tsp vanilla bean paste

Cardamom Hot Chocolate

  • 1/2 + 1/8 cup heavy cream
  • 2.5 oz chocolate I used milk but dark would work as well
  • 1 1/2 cups milk I used skim
  • 1/2 tsp cardamom

Instructions
 

Homemade Vanilla Bean Marshmallows

  • To make round marshmallows: cut strips of cardex paper, tape into a circle shape to create a mould. Grease the inside of each mould and place them on a baking sheet heavily dusted with icing sugar.
  • To make traditional square marshmallows: grease a square pan and dust generously with powdered sugar
  • Dissolve the 3 packets in 1/2 cup of water in the bowl of your stand mixer.
  • In a saucepan cook the sugar, corn syrup and 1/2 cup water, until it reads 245°F on a thermometer
  • Turn the mixer on low and carefully pour in the hot sugar syrup along the side of the bowl, try not to hit the whisk attachment
  • Add the salt, turn the speed up to high and mix for about 10 to 12 minutes until light and fluffy
  • Add in the vanilla bean paste and mix until combined
  • Transfer "meringue" to piping bags and pipe into the moulds or pour into your square baking pan.
  • Let sit overnight on counter top.

Cardamom Hot Chocolate

  • Chop up chocolate into chunks
  • Heat heavy cream in microwave or stovetop until simmering
  • Pour heavy cream over chocolate, let sit for a 1 minute then stir until smooth and melted
  • Add milk and cardamom, stir

    1. I used cardstock actually! Just cut out some strips of cardstock, butter the inside to prevent sticking, tape the ends together on the outside, ta-da!
