Chocolate Chip Cookies

Classic chocolate chip cookie. MMMmmm…

After looking at the ingredients you may think these are average chocolate chip cookies, but they’re anything but! These were crispy around the edges and soft and chewy in the middle. Nothing beats a plate full of warm chocolate chip cookies with some milk for dunking.

Though there are a bajillion kinds of cookies out there, I think my favourite will always just be the chocolate chip cookie. It’s easy to make, it tastes great, and it doesn’t need nuts or any other kind of adornment to flatter itself (don’t let that stop you from spicing your CCCs up though). It’s simple and humble with they’re cute chocolate chips. I love simplicity.

Though these cookies were good, they weren’t the ‘knock my off my feet’ kind of good. Like many other bakers out there, I’m on a quest to find ‘the cookie’. I want something thick and chewy and studded with chocolate! I have heard of the ever so famous chocolate chip cookies from baking illustrated but I have yet to try them out. They’re pretty high up on the priority of my to-bake-list though! For now, here’s the recipe:

Classic Chocolate Chip Cookies

2½ cups all-purpose flour
½ teaspoon salt
3/4 teaspoon baking soda
1 cup butter, softened
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
2 cups semi sweet chocolate chips

How – To:

1. Preheat oven to 375°F.

2. Combine flour, salt and baking soda in a bowl.

3. Cream butter and sugars together in another bowl. Add egg and vanilla and beat until smooth.

4. In small additions, mix in flour using a spatula, the dough will be stiff. Stir in chips.

5. Drop heaping tablespoonfuls of dough on baking sheets and place them 2 inches apart. Bake 12-15 minutes until golden brown around the edges.
