Fudgey, chocolatey, one-bowl brownies slathered with a generous layer of silky smooth matcha and chocolate ganache. These matcha and chocolate ganache fudge brownies are so easy to make and they are the perfect vessel for other flavours and mix-ins.
Matcha and Chocolate Ganache Fudge Brownies
The magic of these matcha and chocolate ganache fudge brownies is that they’re so freakin’ addictive! Oh, and they’re so easy to make! You don’t even need to bring out your heavy duty stand mixer – just 3 bowls and a whisk. Hello easy clean up! So not only will you get an awesome treat, but also a dish-free sink!
The key to this recipe lies in the foundation. There are two types of dark chocolate in this and a touch of espresso to enhance and bring out the chocolate flavour. I like to think of espresso or coffee powder as MSG for any chocolate based desserts. To get that signature fudgey and chewy factor, the chocolate and butter are melted together, and while it is still warm the sugar is added to help it meld into the batter better.
Finally, on top of the brownies is a delicious swirled medley of dark chocolate and matcha ganache. So creamy, so lucious, so goooooooood. The white chocolate that is in the matcha ganache balances out the cacao notes in the other elements, ie. PERFECT. FLAVOUR. HARMONY.
What is ganache?
Ganache is probably my favourite thing ever. It’s simple, just a concoction of TWO ingredients: chocolate and heavy cream. THAT IS ALL, IT’S SO EASY, FOLKS.
Furthermore, it’s easy to make too! To start, you heat up the heavy cream in a pot or in the microwave until it just starts to simmer. Afterwards, you pour it over a bowl of chocolate. Then, you stir it all together until it’s smooth. Finally, just refrigerate until set and TA-DA, you have ganache!
Above all, the coolest thing about ganache is that it is versatile in countless ways. Particularly, it can be easily flavoured with anything (even savory flavours if you’re bold) such as spices, fruit purees, extracts, liquors, etc. It can be also whipped up into an airy texture and used as a filling for cream puffs, cupcakes, cakes, macarons, doughnuts and more. Not only can it be used in its solid state and rolled into melt-in-your-mouth truffles but it can also be used in its liquid state as a glaze or drip. You name it, it can be done.
Natural Leavener vs baking powder or soda
You may have noticed that there aren’t any leaveners (baking powder or baking soda) in this matcha and chocolate ganache fudge brownies recipe. To explain, the batter actually just relies on the natural leavening power of eggs. Rather than powder leavener, which can diminish the fudgey texture, you will utilize the eggs for leavening. To do that, you need to whisk the eggs until the batter increases in volume and looks slightly lighter in colour. That’s how you know you have incorporated enough air into your mixture for the rise factor. As a result, you will get a nice rise in the final product without it being cakey or dry.

Matcha and Chocolate Fudge Brownies
Ingredients
Fudge Brownies
- 1/4 cup unsalted butter
- 4 oz semi-sweet chocolate
- 2 oz bittersweet chocolate
- 3/4 cup sugar
- 2 large eggs
- 1/2 tsp espresso powder
- 1/4 tsp salt
- 1/3 cup all-purpose flour
Matcha Ganache
- 1 cup good quality white chocolate
- 1/3 cup heavy cream
- 2-3 tbsp matcha powder depends on how strong you like it
Chocolate Ganache
- 1/3 cup good quality dark chocolate
- 1/3 cup heavy cream
Instructions
Fudge Brownies
- Prepare an 8x8 square pan by lining it with 2 pieces of aluminum foil or parchment. Make sure there's some overhang off the pan edges for easy removable of the brownies later.
- Using the microwave, lightly melt together butter, both types of chocolates, and espresso. Whisk until smooth and combined. You should have a very silky and shiny mixture.
- Next, whisk in the sugar until combined. The mixture will become grainy - not to worry, this is normal!
- Vigorously whisk in eggs one at a time to incorporate some air to help the brownies rise.
- Gently whisk in the flour and salt until just incorporated, do not over mix.
- Pour batter into a prepared 8x8 square baking pan and bake for approximately 25-30 mins at 350 degrees F or until the batter looks matte and an inserted toothpick comes out clean
- Let cool completely
Matcha Ganache
- Chop up white chocolate into small pieces and place in a small bowl
- Warm up the heavy cream in the microwave or on the stovetop until just starts to simmer.
- Add in matcha powder and stir until completely dissolved.
- If the cream is still hot, pour it over the chocolate and stir gently until everything is well combined. If cream has cooled, reheat in microwave then pour over chocolate. You just made ganache - ta da!
- Do not whip the ganache! You do not want to aerate it. Set aside to cool at room temperature
Chocolate ganache
- Chop up dark chocolate into small pieces and place in a small bowl
- Warm up the heavy cream in the microwave or on the stovetop until just starts to simmer.
- Pour the cream over the chocolate and stir gently until everything is well combined and shiny. You just made ganache - ta da!
- Do not whip the ganache! You do not want to aerate it. Set aside to cool at room temperature
Putting it all together
- Once cooled but still liquid, pour the entire bowl of matcha ganache over the top of brownies and spread it out evenly
- Dollop scoops of chocolate ganache randomly within the matcha ganache
- Using a toothpick, drag it across the top the brownies, creating a random swirl pattern
- Let set on the counter or in the fridge for the ganache to firm up. Remove from pan by lifting it out using the tin foil or parchment handles
- Cut into 3x3 or 4x4 pieces and serve!
