Hi guys!

I’m on “spring” break and it’s been awesome!! I’m only 2 days into the break and I’m already all sugared up. (Mmmm sugar ODs.)

I went on a trip to Portland the past weekend with Karen, Josh, David, William, Wendell and Monica. We didn’t visit any tourist attractions  or do anything extra special. We just needed to get out of Vancouver and head somewhere far enough away to feel a new pace. Portland was just perfect, close enough to drive to and far enough to call it a “vacation” 😛

The two days were full of FOOD (I can feel my thighs rubbing together more than ever), music, and shopping! Gotta take advantage of the tax-free system ahaha

Most of the stuff I bought are baking related, surprise surprise. 

I absolutely FREAKED OUT when i saw CRATE&BARREL AND SUR LA TABLE!!! We don’t have those stores in Canada, so I screamed like a crazy person when I saw them.

OH OH ANDDDDDD, I FOUND GHIRARDELLI CHOCOLATE IN WALMART!!!! 

I’VE. ALWAYS. WANTED. GHIRARDELLI. CHOCOLATE. 

My friend caught the moment when my heart stopped. 

 

You can bet I stocked up on a bunch of ghirardelli chips. My hand is dipping into some as I am typing up this post. 

DOES ANYONE ELSE FEEL EXCITED WHEN THEY SEE BAKING STORES/BAKING CHOCOLATE?!?!?!

This is what it looked like inside Sur la Table, my eyeballs were spinning, I wanted to see everything but there was just so much!!

I need someone to share my excitement with!!!

Ok, time to calm downnn. Sorry if I frightened you 😛 I’m just realllllly hyped on sugar right noww..

Rocky Road Bars

Ingredients

2 large eggs
1/2 cup unsalted butter, melted
1 cup sugar (I used scant 1cup)
3/4 cup flour ( I used half whole wheat and half all purpose)
40mL cup cocoa
11/2 tsp vanilla
pinch of salt
large marshmallows cut in half
1/2 cup chocolate chips
1/2 cup walnuts, toasted then coarsely chopped
How To
1. Melt butter and stir in cocoa until well blended.  Set aside.
 
2. Mix flour, sugar, eggs, vanilla, and salt in a large bowl until well blended.  Pour butter-cocoa mixture over flour mixture and stir until well combined.  Add in some walnuts if you want. 
 
3. Bake for 20-25 minutes, or until toothpick inserted in center of brownies comes out clean.
4. Top the brownies with marshmallow halves, covering the surface. 
5. Place the pan back into the oven and set the oven to broiler mode. Broil for about 3 mins or until marshmallows are just golden brown.
6. Take it out and immediately sprinkle walnuts and chocolate chips over it, letting the chocolate chips just melt. 
7. Cool brownies until room temp and then cut into bars. The marshmallows will be a bit difficult to work with.

    I must admit that I am a cookshop junkie! I love Williams Sonoma, Gourmet Warehouse, Ming Wo, The Cookshop and Cookworks. When I travel, I buy bakeware and of course, Sur la Table is one of my faves. I also picked up a ton of chocolate when I visited San Fran last summer! I haven’t been to Portland yet, but now I know Sur la Table is there…
    Isn’t Crate & Barrel moving into Oakridge? (where the movie theatre was)…I could be wrong…

    1. you are correct! crate and barrel is coming to oakridge! IM SO EXCITED FOR IT.

      im so glad im not the only one who LOVES going to cook/bake shops LOL 😀

  2. When I went to Portland a couple months ago I DIED when I went into Sur La Table..that’s where I bought my favorite new water glass jar. I know we have some in Seattle, but I had never been until Portland! These bars look delicious!

  4. I’m glad I’m not the only one on spring break! I love spring break, but yours sounds like so much more fun than mine. 😛 For my break I’ll be sitting on the couch…catching up on my reading…and doing homework that my instructors ever so kindly assigned over break…

    I get a bit overexcited in the baking aisle too (I think I irritate the other costumers because I just have to kind of stare and take everything in before actually picking stuff up). 😀

  8. LOL, this post cracked me up. I have a C&B and a SLT at our local mall, and I can spend hours inside of each store. Don’t even get me started on Williams Sonoma:) The brownies look incredible. I am such a sucker for anything toaster marshmallow!

    I love Crate and Barrel! They actually have it here in Toronto. The photo of you freaking out at the Ghiradelli chocolate is hilarious!

    1. AHAHA yea that photo pretty much sums up my relationship with chocolate
      you are so lucky you have a crate and barrel! apparently one is opening up here soon, i can’t wait!
      and enjoy your break girly! don’t stress bout university for a bit 🙂
